The earliest recipes for a dish that is very much like hummus were found in the Egypt at around the thirteenth century. however, the earliest documentation of the hummus dish comes from the eighteenth century from the city of Damascus. No documentation of this dish from any other part of the world has been found before that time. This is among the most nutritioinally rich foods that are found around the globe. It is high in iron and vitamin C with other supplements including folate and vitamin B6. The chickpeas in this dish are a great source of protein and dietary fiber; ensuring that the food will be digested thoroughly. The tahini in this dish contains sesame seeds that are the richest source of the amino acid methionine.
