Vegetable Carrots

The carrot is a member of the vegetable family that is known in the scientific world by the name  Daucus carota. This name has a Greek etymology that refers to the horn-like shape of this vegetalbe. This is a root vegetable that is most commonly found in orange colour however purple, red, white, and yellow varieties also exist although not commonly. Its texture is crisp when it is fresh and this texture deteriorates as it looses its freshness. The taproot of this vegetable is the commonly eaten part of this vegetable eventhough the green parts are also edible. This vegetable has been domesticated from a wild carrot Daucus carota that is native to Europe and southwestern Asia. Through selective breeding, the domesticated form is greatly enlarged in the size and less woody textured edible taproot. This is a biennial plant that which grows in the spring as well as summer. This vegetable gets its bright orange color from its ?-carotene content. This is important for humans as it is metabolized into vitamin A in the intestines during digestion. Vitamin A is an extremely important nutrient component. Its deficiency can cause poor vision. An urban legend states that excessive intake of carrots can help people see in the dark however this has been proven to be wrong. On the contrary, overconsumption of this vegetable leads to a benign condition known as carotenosis. The only problem that occurs in this condition is that the skin of the person changes color to orange. Carrots are known to solve many digestive problems, along with intestinal parasites, tonsillitis and constipation. Among children, carrots are among the most popular vegetable that most children eat without any problems. This vegetable that can be eaten in natural form, or steamed or fried or mixed with other vegetable according to the local tradition of the people.
